However, I’m going to let you in on a little secret. Cast iron skillet nachos are always so much tastier than microwaved nachos! Why is that, you wonder? These healthy skillet nachos have crispier chips and melt the cheese more evenly. Plus, the vegetarian toppings send the flavor through the roof.

What should I put on my nachos?
The best part about nachos is how you can customize the toppings to your taste. The possibilities are endless! From beef or chicken to veggies, and much more, you have so many options. Now for this vegetarian nachos recipe, the toppings you’ll add are:
- Black Beans
- Red Onion
- Tomato
- Jalapeño
- Green Onions
What is the best cheese to melt for nachos?
For this recipe, we’ll use cheddar cheese. Cheddar is simply a great classic, and works well with the vegetarian toppings that are used in this recipe. Plus, it also melts better than other cheeses, too!
How are traditional nachos made?
Traditionally, nachos are only made with chips and cheese, and then heated up. This could be done in a cast iron skillet in the oven or over a campfire, in a cooking sheet in the oven, or in the microwave. For this recipe, we’ll focus on using the cast iron skillet in the oven.
Vegetarian Nachos Recipe
Ingredients
- 10 oz Tortilla Chips
- 15 oz 1 can Black Beans
- 1 Red Onion diced
- 2 cups Shredded Cheddar Cheese
- 1 Tomato diced
- 1/2 cup Sliced Jalapeños
- 4 Green onions sliced
- Optional: Salsa for topping
- Optional: sour cream
- Optional: Guacamole
Instructions
- Preheat oven to 350 degrees.
- Add half of your chips to 12″ cast iron skillet, then top with half of the black beans, half of the onion, and half of the cheese.
- Repeat process by adding second half of chips, and remaining beans, onion, and cheese.
- Bake for 8-10 minutes, or until cheese has melted.
- Remove skillet from oven, then top with Tomatoes, Jalapeños, and Green Onions.
- Then add any additional toppings you would like, such as salsa, sour cream, guacamole, etc. Enjoy!
